So you think the life of a restrauteur is a glamorous one? Just tell that to Mark and Francis who were doing battle with a broken hot water heater! Yikes!.You know you are having a bad day when the pipes burst AND the shut off valve comes off in your hand!

One of the great things about the restaurant business is the fact that it is a rather small tight knit community. Which is why it is a bad idea to send your resume to your former employer after you tried to sabotage his restaurant the first time you worked there. What was this guy thinking?

The Guys welcome their friend Chris Goodhart, Wine Director for some of the hottest restaurants in New York: Keith McNally's Balthazar, Pastis, Schiller's Liquor Bar and others. Chris talks about careers started his career working as a wine rat at Windows on the World for Kevin Zraly. He found this to be a great way to learn about wine. His own organization has internships where students can learn the wine business. Mark, Francis and Chris talk about developing wine lists for various style of restaurants and discuss the great "cork vs. screw cap" debate.

Mark and Francis require every one of their employees to have The Windows on the World wine book and use it as the basis for many of their wine classes. They estimate they have sold more than 1,500 of these books over the years. Needless to say, they recommend it highly. It makes a great Holiday gift
