Rick Tramonto's 25-year restaurant career has been a climb to the stars. "Tramonto is a blend of mad scientist and magician in the kitchen. He is innovative, creative and somewhat an illusionist," says Pat Bruno of the Chicago Sun-Times. His flagship restaurant, Tru, was just nominated for a James Beard Award for service. Chef Tramonto talks to The Guys about the hallmarks of fine service, dealing delicately when one set of diners may impinge upon on the experience of other diners (think loud cell phone use).
