Margo True is an editor at Sunset Magazine. She's written and edited for Saveur, Gourmet, and many other publications. The daughter of a foreign service officer, she spent much of her childhood traveling around the world and compiling a catalogue of different flavors in her memory. In one of her recent articles for Saveur, she traces the evolution of the modern Indian menu. How, she wonders, does a complex culinary landscape become, in the most improbable of combinations, abbreviated and then frozen onto the global palette?
