Peter has had a great influence on our own restaurants. He was an early proponent of seasonally driven, local-market-driven cuisine. He has served in the governance of The Union Square greenmarket in NYC for years. His restaurant is casual and intelligent with wine and food brought together to educate as well as delight. We talk to Peter about being at the forefront of the movement that now every chef in America follows to some degree and about keeping his restaurant thriving and integral to the neighborhood and city and all of us over the last 15 years.
