Big Apple Barbecue
Mark and Francis discuss the wonders of barbeque. Francis and Chef Anthony Bucco ventured to NYC to discover the real deal at the Big Apple Barbecue festival at Madison Square Park. On their journey they sample real barbeque from the countries top pit-masters from New York to Texas to The Carolinas, to Florida The guys talk regional differences and about the competitive and communal nature of this national treasure of a cuisine. Are you familiar with "snoot?" It's a delicacy you know and it may be the only barbeque that's good for you. Listen to the show to find out more about it and where to get it.
Finally, they talk about going whole hog! Ed Mitchell of North Carolina came to the event with an 18 wheeler and 30 hogs! Barbecue time is 12-14 hours over charcoal and hickory wood. Francis may be taking a road trip on his Harley to enjoy some of this great barbecue again
